How do you get butterflies, how do you breed them, and what do they do?

Butterflies spawn (rarely) around mutated trees.

Catch them by right-clicking them with a scoop. It's kinda fidgety. You can also kill them and they'll drop pollen, which can be used to auto-mutate a tree leaf.

Aside from looking pretty there's not really much to do... you can use Escritoire to get a jar of butterfly puree and combine that with another butterfly in a crafting table but I'm not sure where to go from there as far as breeding goes.

I pretty much catch mine and put them in a lepidopterist's chest for later, 'cause pretty.

This. ^^

And just to clarify, he means Forestry bred trees when he says 'mutated' trees.
