Hi everyone,

I'm new here and runing a ftb server first time

I've installed time ago the 1.1.6 version on the server. But there is the new update to version 1.1.7

Can anybody tell me how to update the server? Deleting of all folders except plugins for Bukkitforge and word then uploading of the new version files?

Yes that should do it. First however make a backup of the entire server folder, so you can switch back to the old working version in case something goes wrong. When updating make sure to especially delete the config and mods folders, and the server jar. All other folders - if any - should be okay to stay when updating. Then just copy the contents of the new server zip file into the server folder and you should be good to go.
