I currently have a Unleashed server and want to change to Infinity, but I need plugins to work to be able to prevent grief and other features. I've tried KCauldron, but it caused a lot of chunk generation lag (not 100% it was caused by KCauldron tho). What is the standard/recommended way of getting Bukkit plugins to work with Infinity?

There is little need for bukkit plugins to protect grief and similar, there are now mods that serve the same purposes. Just add them to the Infinity modpack.
==List of suggested mods==
*MyTown2
*Forge Essentials
*Admin Command Toolbox
*Morpheus
*Opis
*Server Tools
*Tick Dynamics
*SafeChat
*TNTUtils
*Lag'B'Gon

Also if you are dead set on using Bukkit, I hear MCPC is the same thing? or a continuation?

I haven't used this at all, but from what I've read, it is powerful.
