Why?
Using a sprite sheet (one image that contains multiple icons, which are split up for display) reduces server load. Rather than 12 separate http requests for 12 separate images, a user will load the image once, and the appropriate sections will be displayed as defined by the code. They use this method on the Minecraft wiki for their nav boxes, because of all the icons that would otherwise have to be loaded individually. The downside, as you've seen, is that the code is more obscure. Also, if you're not careful about how updates to the sprite sheet are made, everything will derp up when reviewing page histories.

I'll update the button sprites in a bit, but my workload atm is rather insane.

As for the whole debate on whether we should document vanilla stuff... Personally I really don't have a problem with that, going on the idea of looking at FTB as a separate entity from Minecraft/providing complete documentation for the entire experience. However, given that it's well documented on mcwiki and there's still a lot of documentation missing with all of the new mods and updates, I think we should focus on that first.
