So my AE system is all set up, but how mght one make it so that any ores that are currently in the system and enter the system get macerated and/or smelted? The buses or something?

If you want them automatically smelted, you set up Precision Export Buses to send the ores into your processing machines (with import buses to retrieve the ingots). You want Precision so you can specify several ore types in the same bus, as well as exporting stacks at a time. If you want them smelted on-demand, you set up Interfaces on your machines with the appropriate recipes in them, along with import buses to retrieve the results.
